Please remember these are expected truckloads coming to the OFB warehouse this week. Reminder: It will take a few days for items to appear in inventory depending on when the loads are received into the warehouse. Food is first received into the Statewide warehouse and then must be transformed/moved to the Metro and West warehouses, including a delivery to West. These are estimates on what you can likely expect to see in the coming days/weeks, not when you will see them. Please reach out to the Metro Team (MWCS@oregonfoodbank.org) with questions, not the Operations Team. Thank you!

This week we continue to see fun citrus varieties roll in and a limited selection of veggies. We were able to get a load of Napa cabbage this week which is a fun addition to the cabbage lineup. I think this variety is not only misunderstood and undervalued for its versatility. Anything you can do with a head of common green cabbage you can also do with Napa. But unlike green cabbage it cooks in much less time, has a lighter but ever so slightly bitter flavor that makes it a great partner with citrus and vinegars. If you like Bok Choy I challenge you to try Napa. They are interchangeable in many recipes.
I love making salads out of this cabbage. Thinly slice the leaves and stem, toss with whatever citrus you have kicking around. Make a simple dressing out of oil, vinegar, soy sauce, tahini and whatever else you like in a salad dressing. If you have red cabbage on hand add some of that. If you have some beets, you can roast those and add them too. Clearly I like me salads and slaws to be very off the cuff and toss in anything I have laying around.
