This week I want to highlight the white and yellow potatoes we’re bringing in from Mt Vernon, WA. These new crop potatoes are delicious! Creamy, tender and super versatile in the kitchen. But one thing you really need to be aware of is just how sensitive white and yellow potatoes are to light exposure. Any kind of light exposure.
We are doing our best at OFB headquarters to get these potatoes in and out of our facility quickly to limit their exposure to light in our very bright warehouse. While the windows at the top of the warehouse walls makes for a very nice experience for our crew, it doesn’t make for an ideal long term storage space for potatoes.
So if you get potatoes from us and there is a light green hue on the top and the sides of the pallets, please know that once you get beyond the first 5-6” you should find nice white/yellow spuds. The farm we are bringing these in from, packs them in clear mesh bags which really maximizes air flow while also increasing the risk of light exposure. Why do they do this? Most commercial produce distribution centers have darker spaces than us for storing light sensitive crops so some growers prefer this type of packaging for cost savings. So please be kind to the potatoes and know they sometimes get a little green tinge.

Please remember these are expected truckloads coming to the OFB warehouse this week. Reminder: It will take a few days for items to appear in inventory depending on when the loads are received into the warehouse. Food is first received into the Statewide warehouse and then must be transformed/moved to the Metro and West warehouses, including a delivery to West. These are estimates on what you can likely expect to see in the coming days/weeks, not when you will see them.
